Our coffee line works with Specialty Coffee only, meaning that all coffees must score 80 and above according to the SCAA – Specialty Coffee Association of America - cupping standards.

The micro-lots – the Beyond category – will come from single varietals, single processing method as well as single plots from of course one of our two farms – Santa Lucia and Santa Rosalia.

The other categories are divided in processing methods or blends. The target is to reach consistency shipment after shipment and crop after crop.
All the information about the content of the blend is revealed prior to shipment.

Beyond
This is the very characteristic coffee from the Cerrado Region. Usually comes from the Natural Processing method and is famous for its cleanliness and sweetness.
A coffee distinguished by its refined characteristics:  chocolaty aroma, strong body, medium-low acidity and honey notes.
A coffee for any use: works perfectly as espresso or drip, blended with other origins or single. Nutty aroma, medium body and acidity and caramel notes.
Definitely worth roasting and cupping it as a single origin. This category will be presented in two processes:  Natural – Fruity aroma, high body, medium acidity and berries notes. Pulped – Floral aroma, medium-high acidity, velvety body and citric notes.

This is the blow-your-mind category and there is no guarantee we will have these coffees every year. We rely a lot on nature to have these coffees. Our hard work here is to find these lots in between the 3.500 ha of coffee planted, to harvest and process them in a separate wet mill designated only for micro-lots. Basically, we have to carve the rare stone in to a beautiful piece of jewelry.
